  • In a large bowl, add the softened butter along with the granulated sugar and brown sugar.
  • Use an electric hand mixer to mix everything together thoroughly on medium-high speed.
  • Add the egg, egg yolk, and vanilla extract. Mix again until everything is well combined.
    Steps to make Rolo Cookies: cream the sugar, brown sugar, and butter together, then add in the eggs and vanilla and mix.
  • Using a fine-mesh sieve, sift in the flour, cocoa powder, baking soda, and salt. Mix on low speed until everything comes together.
  • Use a medium-sized cookie scoop to roll out balls of the cookie dough.
  • Press 1 unwrapped Rolo candy in the center and evenly mold the chocolate cookie dough around it.
  • Roll the candy stuffed cookie dough until a bowl of sugar.
    Steps to make Rolo Cookies: sift in the flour, baking soda, salt, and cocoa powder, then scoop and roll the dough into balls to add a Rollo candy in the center, and finally rolling the ball in sugar.
  • Place the prepared cookie dough onto a parchment-lined baking sheet. Preheat the oven at 350 degrees Fahrenheit and bake for about 8-10 minutes. Let the cookies cool slightly before serving since the caramel could be quite hot.
    Steps to make Rolo Cookies: lay the cookie dough balls on a parchment paper lined cookie sheet and bake.

Notes

  • Sift the dry ingredients- Sifting will thoroughly combine the dry ingredients and get rid of any clumps that will dry out your cookies.
  • Wrap the dough around the candy evenly- Make sure to wrap the cookie dough around the Rolo candy evenly so it doesn't melt and seep out the sides.
  • Roll the dough into a ball- These cookies will flatten out quite a bit, so make sure they are baked as candy-filled dough balls.
  • Let them cool- Let the cookies cool slightly before serving since the caramel could be quite hot.
